Served by professional staff with a twinkle in the eye, oysters, seafood and champagne do the rounds at lunchtime. A pinkish-red rillette with bacon on rye bread with cucumber and mayonnaise is nothing less than a Swedish folklore masterpiece. Classics? Famous charred sotare herring with dill butter and mashed potatoes; and the reliable beef brisket with horseradish cream. Pure. Simple. Elegant. And the wine list is so big it practically needs an index.
