In the fashionable fishing village of Arild, chef Björn Palmgren, whose family took over the charming guesthouse in 2004, has a loyal local following for his ambitious cuisine. A firm favourite is the Pissaladière with all the trimmings. In this Provençal-style cheese and tomato-less pizza you get a generous sheet of Serrano ham, browned chanterelles and goat’s cheese. Good contrasts are nicely presented; skin-fried cod with beetroot, chopped egg and a -play-ful sour sauce of sweet pickled -herring, red onion, chives and browned -butter; flavoursome Genarp rooster with broad beans and artichoke in a delicately nuanced, clear tarragon sauce. Great raw ingredients and local produce with a personal touch.
